Two months ago I added cheesecake brownies to my bakery menu, since then every week both my customers and followers have asked for the recipe.
However I have not been able to share it with them, this is not because I was gate keeping my recipe but simply because I was changing it every week. Originally I added eggs to the cream cheese mixture (like you would a cheesecake) but I found this caramelised too quickly in the oven and I lost the lovely white cheesecake swirl. Then I experimented with different chocolates, milk, dark even white, and finally to add an extra element I started to add fruit.
It took me 6 weeks but I feel I’ve finally cracked the recipe and can share it with you know!- thank you for your patience :)
Ingredients
120g dark chocolate
120g butter
2 eggs
120g caster sugar
50g brown sugar
70g plain flour
120g cream cheese
1tsp vanilla paste (optional)
120g crushed mixed berries (I melt down frozen ones)
Method
Preheat your oven to 180c/350f
1) Melt your butter over a low heat in a medium saucepan, once melted add your chocolate (chopped or in chips), stir until melted then set aside.
2) Whisk your eggs and sugar in a mixing bowl, then pour in your chocolate. Stir into a batter then fold in your flour. In a separate bowl, whisk your cream cheese and vanilla (if using) into a runny paste -add milk if necessary.
3) Pour the brownie batter into a lined baking tray (roughly 9” or 23cm), dollop the cream cheese and berry mixture on top. Then with the end of a knife or skewer, swirl the cream cheese through the batter.
4) Bake for 20-25 minutes (edges should be set but middle should be very soft). Cool then eat!
