Fluffy, nutty and spiced, I think these may be my new favourite buns….i promise, I really don’t say that lightly.
Ingredients:
400g strong white bread flour
100g wholewheat flour
7g yeast
7g salt
50g sugar
300ml milk
60g butter
For the brown butter and cardamom sugar
200g butter
100g granulated sugar
1tbsp cardamom
2tbsp honey
Method:
In a saucepan, warm your milk and add your butter, warm until the butter has melted then set aside.
Grab yourself a large mixing bowl, whisk together your flours, salt, yeast and sugar. Make a well in the centre and pour in your milk and butter. Knead for 8 mins on a stand mixer or 15 by hand. Pop into an oiled bowl, place a cover over the top and proof for 1hr. Then either pop into fridge for up to 24hrs (this develops the flavour and makes shaping easier) or proof at room temp for another hour.
Pop your butter into a saucepan, melt then brown (15mins) at a low heat. Scoop the dough out onto a floured surface and roll into a 1cm thick rectangle. Brush the dough with your brown butter (leaving some in the pan), mix your sugar and cardamom then sprinkle on top of the butter.
Fold one third of the dough (lengthways) onto the centre third then fold the last third on top.
Roll widthways, so that you have a rectangle roughly 10cm in width. With a pizza cutter, cut out 10 strips.
Line 1-2 baking trays with parchment paper. Gently stretch each strip, twist then roll into a coil, tucking the end under the bottom.
Place onto your baking tray, pop a cover over the top and proof for 1hr in a cosy area.
Preheat oven to 180c/160fan
Bake for 20-25 minutes until golden. Meanwhile add 2tbsp of honey and 1tbsp water to the remaining brown butter pan, bring to a simmer and combine.
Once the buns are out, brush with your honey brown butter and sprinkle with cardamom sugar (optional). Cool then enjoy!
