Although I LOVE gluten, it’s always really important to me that I’m accommodating all my customers. I offer dairy free bakes so I thought it’s only fair to offer gluten free treats to.
The problem is, many gluten free bakes required ingredients I had no idea how to pronounce let alone get hold of.
Then one day I came across a ‘brookie’ (brownie cookie) recipe. The recipe required the tiniest bit of flour which I switched for coco powder and voila! Suddenly I had the perfect, naturally gluten free chocolate fudgy cookie.
Chocolate and orange is one of my favourite flavour combinations of all time! I hope you enjoy ;)
Ingredients
50g unsalted butter
250g dark chocolate (70%)
2 eggs
150g light brown or caster sugar
Zest from 1 orange
2tbsp coco powder
Flaky sea salt (to sprinkle)
Method
1) Preheat your oven to 180c/160fan, line a baking tray with parchment paper.
2) Grab a large mixing bowl, pour in your sugar and rub in the orange zest. Let sit for 15 mins. Meanwhile, either using a microwave or bowl over a saucepan of boiling water, melt your butter and chocolate.
Crack the eggs into the sugar, whisk into a fluffy batter then slowly whisk in the chocolate. Finally, fold in the coco powder. If the dough is very loose, pop it in the fridge for a few minutes.




3) With two spoons, scoop around 6-8 dollops of dough onto you baking tray. Pop it in the fridge for 10-20 mins then roll the dollops into balls, place spread out on the oven, sprinkle with flaky salt and bake for 15 minutes until crisp on the outside and gooey in the middle.
Cool then enjoy!
