I live at the foot of the Chilterns, and during the summer my sister and I will go on long walks (well, long for me, short for her). We follow the ridge way path and walk as far as we can, before going down into a village or town and catching a bus back (or bribe a family member to pick us up.)
Although I love chocolate hob nobbs and jaw breaking granola bars, I find after a few snacks/hours in, I really want something savoury. So I’ve started to make these little ‘everything bagel’ bites.
Crisp and fluffy dough balls, filled with cream cheese and sprinkled with salt and seeds. They are my perfect go to snack on the go.
Ingredients:
500g white bread flour
10g salt
4g dried yeast
330ml water
150g cream cheese
Everything bagel seasoning (poppyseeds, sesame seeds, crispy onions, flaky salt)
Method:
1)Grab a large mixing bowl, pour in your water, flour, salt and yeast. Mix into a shaggy dough then pop a cloth over the top. Leave for 2hrs, you can then use the dough straight away or pop it in the fridge for up to 24hrs to develop more flavour.
2)Scoop the dough out onto a floured surface. Roll into a cm thick square, then cut out 15-18 squares. Spoon a tsp of cream cheese into the centre of each blob. Pinch all the corners together, then place seam side down onto a tray lined with baking paper. Leave in a cosy area to proof for 1hr.




Preheat the oven to 200c/180fan




3)Brush each roll with a little milk, sprinkle over your everything bagel mix. Bake for 15-20 minutes until golden. Cool the enjoy!
