Gluten morning, if you’ve been following me for a while you’ll know that every Friday I make a couple batches of funky flavoured sourdough. This is possibly the best day of my week for two reasons, the first being I love to experiment. We all get so creative with what we put on bread but never what we put in bread and sourdough is such a perfect vehicle for flavour. The second reason is that the profit from these funky flavoured loaves goes to Breaducating Britain, giving free bread kits to schools, food hubs and community groups.
Annnddd there’s one more (a third) reason which is I just love eating these loaves.
Miso, sesame and scallion sourdough
AKA, umami bread, my first funky flavoured sourdough. Whatever you eat this loaf with, it transforms it. Bread and butter becomes a hearty meal, jam becomes a sweet and salty flavour bomb and don’t get me started on eggs.
Quick note: The secret to making bakery quality sourdough at home is a Dutch oven (casserole dish)- the dusty pot your nan always has at the back of her cupboard. If you don’t have one, don’t worry you can use a loaf tin. If you looked online and saw a gorgeous ‘le creuset’ the price of a car don’t worry either, you can actually pick up one for about £10 in most charity shops (after a nan decided to do a clear out).
